Tomorrow is the start of the last week of my little boy being at nursery & so we decided to make a cake for him to take into his class before he embarks on the big journey to join his sister at primary school.
Nothing beats a good fudgy chocolate cake made lovingly by a 4 year old little boy, someone who is growing up to be quite the foodie. “Mummy can we go to the farmers market”? Is a common request on a Sunday morning.
Cake Ingredients.
2 Tbsp Cocoa Powder
1 Tsp Bicarbonate soda
150g Caster Sugar
2 Medium Eggs
150 ml Olive oil
150 ml Semi skimmed milk
2 Tbsp Golden syrup
Icing Ingredients.
75g Unsalted Soft butter
175g Icing Sugar
3 Tbsp Good Cocoa Powder
3 tbsp Warm Water
Method
- Pre-heat oven to 180ÂșC Grease and line two (7 inch) sandwich tins (although I use Silicone ones)
- Sieve the flour, cocoa and Bicarbonate of Soda into a bowl. Add the sugar and mix together.
- Add the syrup, eggs, oil and milk. & beat well until nice and smooth.
- Spoon the mixture into the two tins as equally as possible and bake for 25 - 30 minutes until risen and firm to the touch. Remove from oven, leave to cool before turning out onto a cooling rack.
- Place the butter in a bowl and beat until soft. Gradually sift and beat in the icing sugar and cocoa powder then add enough warm water to make the icing smooth and spreadable.
- Sandwich the two cakes together with the butter icing and cover the top of the cake with more butter icing. & finish with chocolate sprinkles, curls, shavings or what ever topping you desire.
