Nothing quite reaches the depths of comfort like a intense slightly soft & chewy chocolate chunk cookie, the fact that these contain rich cocoa, dark and milk chocolate chunks takes them from something special, to something sublime.
The smell of these cookies wafting from the oven has people smiling as they walk through the door, deep dark chocolate, with the smell of a Brownie but the taste and texture of cookie heaven.
Ingredients
150g soft Unsalted Butter
125g Light Brown Sugar
100g Golden Caster Sugar
1 Tbsp Good Vanilla Extract1 Egg & 1 Egg Yolk
250g Plain Flour
50g Good Cocoa (I use Green & Blacks)
1/2 teaspoon Bicarb
175g Milk Chocolate – In medium(ish) chunks
175g Dark Chocolate (In Smallish Chunks)
Method
Preheat the oven to 170 degrees & Line a baking sheet with baking parchment (or use a silicone one like I do)
melt the butter and allow it to cool
Beat together the sugars and the slightly cooled butter
Add the vanilla, eggs and beat until the mixture is nice and creamy
Slowly mix in the cocoa, flour and bicarb then once blended add in the two chocolates
Using an ice cream scoop, put a heaped mound onto the trays and flatten very slightly
This makes about 6 – 7 cookies (large ones) so I do need to use two baking trays, do leave a gap between the dough scoops as these will spread to around 4-5 inches
Place in the oven for 13 – 15 minutes until slightly crisp at the edges but still soft in the middle
Cool on the baking sheet for 7-8 minutes until transferring to a wire rack.
These cookies will last (or should I say would if not eaten before hand) for 3 days in an airtight container. These can be frozen also but make sure that they are wrapped separately , warm in the oven for a few minutes to defrost then cool as before!
