Escabeche: A Sweet and Sour Filipino Dish

Escabeche is a typical Mediterranean dish. In the Philippines, it is prepared by cooking fried fish in soy sauce, vinegar, and sugar. It is actually referred to as sweet and sour in English because of the use of vinegar and sugar as its main ingredients.

Soy sauce is one of the ingredients that are usually used for this Filipino dish. However, I’ll use tomato sauce instead of soy sauce in this recipe. This recipe is a new and delicious way of preparing Filipino escabeche.

Ingredients:
  • 1 medium-sized fried fish
  • 250g tomato sauce
  • ¼ cup vinegar
  • 2 tbsp white sugar
  • 3 red bell peppers (sliced into strips)
  • 1 sliced onion
  • 2 sliced tomatoes
  • 1 thumb-sized ginger (thinly sliced into strips)
  • 2 cloves of garlic (crushed)
  • 1 cup of water
  • Cooking oil
  • Black & ground pepper
  • Vetsin
  • Salt
Cooking Procedure:

1) Heat the oil and once hot, sauté the garlic, onion, and ginger until the garlic turns golden brown.
2) Add the sliced tomatoes and sauté again for one minute.
3) Add the fried fish and pour one cup of water.
4) Add vetsin, pepper, and salt to taste.
5) Let it simmer for five minutes.
6) Add the tomatoe sauce, vinegar and sugar.
7) Add the bell peppers and simmer again for another ten minutes.

After following the seven steps above, your Filipino escabeche is already prepared! Just transfer to a serving dish and your meal is ready. Serve hot!
