Magdalenas American style = Peanut butter Muffins

Magdalenas are our Spanish Muffins, although I see some differences between Magdalenas and Muffins. First of all, muffins look huge to me, magdalenas can be eaten in two bites :D. Also, there seems to be a great variety of muffins and if we add cupcakes then possibilities are endless; ask google, for example and see what you can get! Now do the same with magdalenas and see the difference!

I'm not saying ones are worst than the others, I only say that muffins and cupcakes are some steps ahead. That's why I made these Americanised magdalenas... I used peanut butter and I discovered I'm totally in love with it! So, since Valentine's day, peanut butter and muffins are imported things to us... let's celebrate the day with this special Magdalenas!!!

I made two batches and the result was spectacular! They were so crispy on the surface and spongy inside, and that peculiar peanut taste and aroma... Ooooohhh, they drove us mad when baking in the oven and it was hard to wait until they cooled down.

So, in case you don't have the recipe, take this one and be happy on your Valentine's day!!!

Ingredients for 2 batches: 2 cups of brown sugar, 1/2 cup of butter, 1 cup of peanut butter, 3 medium eggs, 1 1/2 cup of milk, 1 teaspoon of vanilla extract, 2 1/2 cups of cake flour, 1 teaspoon of baking powder, 1 pinch of salt 1/2 cup of chocolate chips.
  • Mix the sugar, butter and peanut butter and add the eggs one by one. Whisk with the help of an electric mixer. Add the vanilla.
  • In a different bowl pour the flour, the baking powder and the salt. Sift it with a sieve inside the dough and mix while pouring the milk into it.
  • Preheat oven at 180ÂșC.
  • Once you get an homogeneous dough, add the chocolate chips.
  • Pour inside the paper molds, place over the oven's rack and bake for 25 minutes aprox.
