Tomato & Basil Soup




I have to admit, this has to be my favourite soup, so simple to make and is one of the rare soups where you can taste each of the ingredients that go into it.

Ingredients

2 tbsp olive oil
500g chopped onions (red if possible)
2 cloves garlic chopped
4 tins chopped tomato (get a good make for this)
80g fresh basil chopped
2 tbsp agave nectar (or sugar if you don't have this)
1 tsp salt
1 small tine (140g) tomato purée
1 vegetable stock cube
500ml boiled water

Fry the onions in the oil until soft, then add the garlic and fry for about a minute longer.

Add everything else except the basil, bring to a boil and then simmer for 40 minutes.

Blend the soup with a hand held blend until smooth, add the basil leaves before serving (freezes well too)

Serves 4 big bowls or 6 as a starter
