Warm chicken a la vinaigrette Recipe

Ingredients
1 Knorr Chicken Stock Cube
1tsp olive oil, plus olive oil for roasting
1.2kg chicken
1-2 shallots peeled and very finely chopped

For the hot vinaigrette dressing
40ml white wine vinegar
75ml extra virgin olive oil
basil sprigs
parsley sprigs
chives (cut in half)

You might wonder why I roast a whole chicken, and then cut it up into portions? Well, a whole chicken is very good value compared to chicken fillets and, in my opinion, chicken cooked on the bone always has a better flavour.

Preheat the oven to Gas Mark 5, 190°C, 170°C fan, 375°F.

I like to season my chicken with a Knorr Chicken Stock Cube. Crumble the Knorr Chicken Stock Cube into the olive oil, mixing into a paste until the cube has dissolved. Rub the paste over the chicken to season it.

Pour a little olive oil into a roasting tin and place the seasoned chicken in the tin. Roast for 1 hour to 1 hour ten minutes until the chicken is cooked through. Make sure you check that the chicken is thoroughly cooked by inserting a skewer into the chicken near the leg; if the juice run clear, then the chicken is cooked through. If the juices are bloody, then cook the chicken for a little longer. As I often say, use your eyes when you cook.

Remove the chicken from the oven and set aside to rest in the roasting tray until still warm but just cool enough to handle.

Remove the chicken from the roasting tray and place the roasting tray on the hob. Now make the hot vinaigrette dressing. Heat the roasting juices in the pan until hot, and then add in the white wine vinegar, shaking the pan to dissolve the roasting juices into the vinegar. You want to cook this until the vinegar has reduced by two-thirds and is almost syrupy.

While the vinegar is reducing, cut the warm chicken into serving pieces, using a sharp knife. Watch me and you'll see how easy this is. First cut off the legs, then cut through the joints to separate the legs into thighs and drumsticks. Cut off the wings. Cut the breasts off the chicken, then slice the breasts into portions. Place the legs, wings and breast pieces on a serving platter. Sprinkle the finely chopped shallot over the chicken. I'm very fond of shallots, as you might have noticed.

Now finish off the dressing. Add the olive oil to the reduced vinegar and stir in. Taste to check the seasoning and adjust to taste. Spoon the hot vinaigrette over the portioned chicken. Garnish with basil, parsley and chives and serve at once.

This would be nice with a fresh tomato salad, a potato salad or simply boiled new potatoes.

Chef's tip from Marco Pierre White: A very simple alternative to a roast chicken is my Warm Chicken a la Vinaigrette with shallots and herbs. I use the chicken's roasting juices to make a warm vinaigrette - very simple, very good.

It might sound a little strange, but this roast chicken will be so tender and delicious, it will make your Sunday!

Ingredients (serves 4)

1 lemon
1 large (about 1.6kg) free-range chicken
2 bay leaves
40ml (2 tbs) extra virgin olive oil
1 tbs finely chopped rosemary
40 garlic cloves, skin on
300ml chicken stock
300ml white wine


Method

Preheat oven to 190°C.

Cut the lemon in half lengthways and place in the cavity of the chicken with the bay leaves. Tie the legs together with kitchen string to secure, then rub with the olive oil and sprinkle with the rosemary. 


Place the chicken in an ovenproof casserole dish, add the garlic cloves, stock and wine and bring to the boil on the stovetop over medium heat. Cover with a lid and transfer to the oven for 1 hour and 10 minutes. Remove lid and roast for a further 20 minutes or until the chicken is golden brown.

Remove the chicken from dish and set aside to rest. Use a slotted spoon to remove about 16 of the garlic cloves and set aside. Place the baking dish on the stovetop over high heat and simmer for 5-6 minutes to reduce to a sauce, pressing the garlic to release the flavour. Strain.

Serve the roast chicken with the reserved garlic cloves and drizzle with a little sauce.

Ingredients (serves 4)

1.6kg whole chicken
1 lemon, halved
2 teaspoons olive oil 

Method

Preheat oven to 220°C. Lightly grease a roasting pan. Place a wire rack into roasting pan. Trim excess fat from chicken. Discard neck. Rinse chicken (including cavity) under cold running water. Pat-dry with paper towels. Season cavity with salt and pepper.

Gently squeeze the juice from half the lemon over chicken, rubbing juice into skin. Place both lemon halves into chicken cavity. Tie legs together with kitchen string.

Brush both sides of chicken with oil. Season chicken all over with salt and pepper. Place, breast-side up, onto rack in roasting pan. Roast for 1 hour or until juices run clear when chicken thigh is pierced with a skewer. Stand, covered, for 10 minutes. Serve with roast vegetables, if desired.

30-minute roast chicken recipe

Who says you don't have time for a roast on a Tuesday night? This chicken will be on your table in half an hour.

Ingredients (serves 4)

20g (1 tbs) unsalted butter
20ml (1 tbs) olive oil
4 large chicken pieces on the bone (preferably Maryland)
2 large desiree or pontiac potatoes, peeled, cut into 2cm pieces
4 garlic cloves, peeled
6 eschallots (shallots)
1 lemon, halved
3 tbs chopped fresh tarragon
250ml (1 cup) dry white wine
250ml (1 cup) chicken stock
2 tbs Dijon mustard


Method

Preheat the oven to 220°C.

Place butter and oil in a non-stick frying pan over medium heat. Add chicken and brown for 2 minutes each side until golden. Transfer to a medium baking dish (it is important that the pan is big enough so that there is plenty of room).

Add potatoes to the frying pan and cook until light golden. (They don't need to be cooked through yet.) Arrange them around the chicken with the garlic and eschallots. Squeeze lemon over the chicken and season. Sprinkle over half the tarragon and roast in the oven for 30 minutes. Transfer the chicken and vegetables to a serving platter.

Place the roasting pan on the stovetop over medium heat. Add the wine, stock and mustard and cook, stirring, for 3-4 minutes until reduced. Pour over the chicken and garnish with remaining tarragon. Serve with a green salad.

Ingredients

2 tbsp chopped olives or sundried tomatoes - whatever you've got
1 garlic clove , crushed
½ tsp dried mixed herbs
200g tub full-fat soft cheese
4 plump boneless, skinless chicken breasts
4 ripe tomatoes , sliced
olive oil , for drizzling

Method

Heat oven to 220C/fan 200C/gas 7. Beat the olives or sundried tomatoes, garlic and almost all the herbs into the cheese, then season. Cut a slit along the side of each chicken breast, then use your knife to open it out into a pocket.

Stuff each breast with a quarter of the cheese mix, then press to close. Lift onto a greased baking tray. Season the top of the chicken, then overlap tomato slices over the top of each piece of chicken. Season, then scatter with the remaining herbs. Drizzle with olive oil.

Roast for 20 mins until the chicken is golden around the edges and the tomatoes look a little shrivelled. Serve with a green salad and crusty bread to mop up the juices.

Tip

To vary this recipe, you can swap the soft cheese for a soft garlic and herb cheese.

Ingredients

125g ball mozzarella , torn into small pieces
50g strong cheddar , grated
1 tbsp wholegrain mustard
4 skinless boneless chicken breast fillets
8 smoked streaky bacon rashers

Method

Heat oven to 200C/fan 180C/gas 6. Mix the cheeses and mustard together. Cut a slit into the side of each chicken breast, then stuff with the mustard mixture. Wrap each stuffed chicken breast with 2 bacon rashers - not too tightly, but enough to hold the chicken together. Season, place on a baking sheet and roast for 20-25 mins.

Try

Tip

If you want to use less bacon, stretch out four rashers using the back of a knife to make each one longer and thinner. Wrap just one around each chicken breast as before.

Make it veggie

Cheesy baked mushrooms: Heat oven to 180C/fan 160C/gas 4. Mix the mozzarella and cheddar with 1 tbsp pesto, then spoon into the hollows of 4 portobello mushrooms. Place on a baking tray and roast for 15 mins or until the mushrooms are softened and the cheese is bubbling.

Indian spiced chicken & roast squash recipe

Ingredients

For the chicken
1.5kg whole organic free-range chicken
2 tbsp olive oil
1 large orange, cut in half
1 small onion, chopped
small handful fresh bay leaves
1 tsp garam masala

For the ginger and cumin roast squash
2-3 tbsp sunflower oil
1 red onion, cut into wedges
1 kg butternut squash, peeled, deseeded, cut into wedges
2.5cm fresh ginger
½ tsp dried chilli flakes
2 tsp ground coriander
2 tsp cumin seeds
4 garlic cloves, unpeeled

Mint and lime raita
150ml natural yoghurt
small handful fresh mint leaves, chopped
zest of ½ a lime

Preparation

Preheat the oven to 200°C/fan180°C/gas 6. Season the chicken's cavity with salt and pepper and place in a large roasting tin. Cut one orange half into wedges and place some inside the cavity and some around the chicken. Place the onion wedges and the bay leaves in the chicken cavity. Tie the legs together with string. Rub all over with the olive oil, season and scatter with garam masala. Squeeze the other orange half into the bottom of the roasting tin, add 150ml hot water, cover with foil and roast for 45 minutes.

Meanwhile, toss the red onion wedges and squash with the sunflower oil and then scatter with the ginger, spices and garlic and mix together well so it is all coated in the spicy mix. Tip into a very large roasting tin (large enough so the vegetables can sit happily in one layer without being piled up so that it roasts evenly and doesn't stew). Place in the oven and roast for 40-45 minutes or until tender and lightly browned around the edges.

Remove the foil from the chicken and roast for a further 20-30 minutes or until the skin is golden and the juices from the thigh run clear when pierced with a skewer.

For the raita, mix the yoghurt with the chopped mint and lime zest and place in a small serving bowl.

Serve the chicken sliced with the roasted squash and the mint raita on the side and pour the chicken roasting juices over the top as an instant gravy.

Chicken with samfaina recipe

A vibrant and robust Catalan classic. I've adapted this dish from a recipe by food writer Coleman Andrews. I prefer cooking the eggplant over an open flame to give it a touch of smokiness and depth; it can be done in the oven as well. The chicken is first roasted in the oven and then the samfaina is added to the pan to combine flavours. 

Ingredients

Chicken

1 free range chicken, cut in 4 pieces
Salt and freshly ground pepper
1 tsp chilli flakes
100mL extra virgin olive oil
Juice of 1 lemon
Extra virgin olive oil to finish
1 tbsp chopped parsley

Samfaina

2 medium eggplants
2-3 tbsp olive oil
1 large onion, thinly sliced
2 cloves of garlic, crushed
2 anchovy fillets
2 medium zucchini, cut into 1.5cm dice
3 small capsicums
(2 red, 1 green), roasted, peeled and cut into strips
4 tomatoes, seeded and roughly chopped

Method

For chicken: Preheat oven to 200C.

Season chicken pieces with salt, pepper and chilli and drizzle with extra virgin olive oil. Roast for 1 hour or until golden brown.

For samfaina: While chicken is roasting, make the samfaina. Turn eggplants frequently over an open gas flame until charred all over. Try not to break the skin as you turn them. Remove to a plate to cool slightly. Half eggplants, scoop out the flesh and cut into strips, avoiding charred skin.

Heat the oil in a heavy-based pan and add the onion and garlic. Cook for a few minutes until softened and golden. Add the anchovies, zucchini and capsicum, season with salt and pepper and cook over a low heat for 10 minutes, then add the tomatoes and cook a further 5 mins. Add eggplant, remove from heat and season to taste.

When the chicken is done, remove from oven and add the samfaina to the roasting pan with the chicken and stir to combine all the juices and flavours. Return pan to oven to cook a further 5 mins.
To serve

Drizzle with lemon juice, extra virgin olive oil and finish with chopped parsley.

Serve hot or warm.

Serves 4-6.

Sticky marmalade chicken with roasties recipe

Ingredients

4 large potatoes
2 onions, quartered
2tbsp vegetable oil
pinch of chilli powder (optional)
1 pack chicken drumsticks (contains 6-8)
2tbsp marmalade
freshly ground black pepper
1 or 2 red peppers, deseeded and roughly chopped
frozen mixed vegetables, to serve

Preparation

Preheat oven to Gas 7, 220ºC, 425ºF. Cut the potato into 1cm (½in) cubes and the onions into 8 wedges. Heat the oil in a large roasting tin. Add potatoes, sprinkle with chilli if using, and roast for 10 minutes.

Score the chicken drumsticks with a sharp knife. Warm the marmalade in a pan until it almost melts, then add the chicken pieces and roll in the marmalade to coat.

Remove potatoes from the oven, add the chicken, season well and roast for 25 minutes more. Add peppers and cook for 10-15 minutes until chicken is golden, and cooked through.

Roast rosemary chicken recipe

Ingredients

2 red onions, peeled and cut into segments
1 small squash, peeled, deseeded and chopped
1 bulb garlic, cut into half horizontically
8 chicken thighs
olive oil
balsamic vinegar
2tbsp fresh rosemary, chopped
50g (2oz) pecans, chopped

Preparation

Preheat oven to Gas 6, 200°C, fan180°C.

Peel and cut 2 red onions into segments. Peel, de-seed and chop a small squash. Cut 1 bulb garlic in half horizontally. Spread everything out on a roasting tray and put 8 chicken thighs on top.

Drizzle over some olive oil and balsamic vinegar. Mix together, then roast for 20 minutes. Add 2tbsp chopped fresh rosemary and 50g (2oz) chopped pecans.

Return to the oven for 15-20 minutes until the chicken is cooked. Serve with a green salad.

Smoky chicken wings recipe

Ingredients

1kg (2Ib) Value chicken wings
2 garlic cloves, crushed
1tbsp muscovado sugar
¼tsp smoked paprika
pinch dried chilli flakes
freshly ground black pepper

For the satay sauce:
25g (1oz) creamed coconut
3tbsp crunchy peanut butter
1tbsp light soy sauce
2tbsp sweet chilli sauce
coriander leaves
Market Value cucumber, cut into chunks
lime wedges

Preparation

Preheat the oven to Gas 7, 220°C, fan200°C. Cut the chicken into 3 pieces between the joints (use wing tips to make stock). Place into a roasting dish with the garlic, sugar, paprika, chilli flakes and pepper. Toss well to coat. Roast for 35-40 minutes until golden.

To make the satay sauce, dissolve the creamed coconut in a pan with 200ml (7fl oz) boiling water and stir until smooth. Add the peanut butter, soy sauce and sweet chilli sauce. Mix well and warm through.

Pile wings on to four plates and garnish with coriander leaves, cucumber and lime. Serve with fragrant white rice and small bowls of the satay sauce.

Ingredients

12 chicken drumsticks
50g (2oz) flour
freshly ground black pepper
1tsp mild curry powder
1 clove garlic
2 eggs
150g (5oz) sesame seeds

Preparation

Preheat the oven to Gas 4, 180°C, 350°F. Brush a baking sheet with a little olive oil. Peel the skin away from the drumsticks.

Mix together the flour, pepper and curry powder and put on a plate. Whisk the eggs in a bowl. Put the sesame seeds on a separate plate.

Dust each drumstick with the flour mixture, then dip in the egg wash and roll them in the sesame seeds to cover all over. Place on the baking sheet and cook for 25-30 minutes. Check and rotate during cooking to ensure the drumsticks are golden all over.

25g (1oz) butter
2 limes
2 lemons
4 tbsp olive oil

Preheat the oven to gas 5, 190°C, fan 170°C. Dry the chicken with kitchen towel, then smear it all over, including inside the cavity, with butter.

Zest and juice the limes and lemons and mix together with the olive oil.

Put a squeezed lemon and lime half inside the chicken, along with the garlic cloves.

Place the chicken in a deep roasting tray and scatter around the remaining lemon and lime halves, the sprigs of thyme and the bay leaves. Season well, then pour over the citrus-flavoured olive oil.

Roast, uncovered, for around 1 hr 40 mins, basting occasionally. The chicken is done when the juices run clear and golden. For extra-moist meat, allow the chicken to rest before serving.

Roast chicken breast with beetroot recipe

Ingredients

200g (7oz) beetroot
2tbsp olive oil
4 chicken fillets
50g (2oz) pine nuts
200g (7oz) spinach
juice of 1 lemon
125g (4oz) Finest Kidderton Ash goats' cheese, crumbled

Preparation

Heat the oven to Gas 4, 180ºC, 350ºF. Wash, top and tail the beetroot, cut into wedges and toss in the olive oil.

Cook beetroot in the oven for 15 minutes, then add the chicken fillets and roast again for 10 minutes. Then add the pine nuts and roast for a further 10 minutes.

Remove the chicken fillets, add the spinach leaves and lemon juice to the beetroot mixture, then toss, cover with foil and return to the oven for 2 minutes.

Meanwhile, slice the chicken fillets. Remove the vegetables from the oven, mix well and serve topped with the sliced chicken and goats' cheese.

Ingredients

1 (5 to 6 pound) roasting chicken
Kosher salt
Freshly ground black pepper
1 large bunch fresh thyme, plus 20 sprigs
1 lemon, halved
1 head garlic, cut in half crosswise
2 tablespoons (1/4 stick) butter, melted
1 large yellow onion, thickly sliced
4 carrots cut into 2-inch chunks
1 bulb of fennel, tops removed, and cut into wedges
Olive oil

Directions

Preheat the oven to 425 degrees F.

Remove the chicken giblets. Rinse the chicken inside and out. Remove any excess fat and leftover pin feathers and pat the outside dry. Liberally salt and pepper the inside of the chicken. Stuff the cavity with the bunch of thyme, both halves of lemon, and all the garlic. Brush the outside of the chicken with the butter and sprinkle again with salt and pepper. Tie the legs together with kitchen string and tuck the wing tips under the body of the chicken. Place the onions, carrots, and fennel in a roasting pan. Toss with salt, pepper, 20 sprigs of thyme, and olive oil. Spread around the bottom of the roasting pan and place the chicken on top.

Roast the chicken for 1 1/2 hours, or until the juices run clear when you cut between a leg and thigh. Remove the chicken and vegetables to a platter and cover with aluminum foil for about 20 minutes. Slice the chicken onto a platter and serve it with the vegetables.

Simple Roasted Chicken

1 medium sized chicken jointed into 4 big pieces

2 teaspoons lime juice or vinegar
2 teaspoons chopped garlic
4 tablespoons Butter
Salt to taste
2 teaspoons whole pepper corns
2 onions chopped into big chunks
2 red dry chillies broken into bits

Heat the butter in a suitable pan and add the chicken pieces and all the other ingredients. Mix well and stir fry on high heat for a few minutes till the chicken changes colour. Add a little water and simmer on low heat till the chicken is tender and the water dries up. Keep frying on low heat for a few more minutes till the chicken pieces are nicely browned. Served with Mashed Potatoes and Bread.
