Grilled chicken with noodle salad recipe

Ingredients (serves 4)

12 (500g) chicken tenderloins, halved lengthways
1 tablespoon olive oil
2 teaspoons sesame oil
450g packet fresh hokkien noodles
1 carrot, peeled, cut into matchsticks
1 cucumber, cut into matchsticks
1 small red capsicum, thinly sliced
100g snow peas, sliced lengthways
1/2 cup fresh coriander leaves
2 tablespoons sweet chilli sauce
1 1/2 tablespoons soy sauce
1 tablespoon sesame seeds, toasted

Method

1. Thread chicken onto skewers. Place skewers in a shallow ceramic or glass dish. Add olive oil and sesame oil. Turn to coat.

2. Place noodles in a heatproof bowl. Cover with boiling water. Stand for 3 to 4 minutes or until tender. Using a fork, separate noodles. Drain. Rinse under cold water. Place carrot, cucumber, capsicum, snow peas and coriander in a large bowl. Add noodles. Toss to combine.

3. Place sweet chilli sauce and soy sauce in a screw-top jar. Season with pepper. Secure lid. Shake to combine. Pour dressing over salad. Toss to combine.

4. Heat a greased barbecue plate or chargrill over medium-high heat. Cook skewers for 3 minutes each side or until cooked through. Serve with noodle salad topped with sesame seeds.

Notes

You will need 12 pre-soaked bamboo skewers.
