As a family, my kids and husband seem to get through a large amount of bread, however the moment it shows the slightest sign of staleness, it is destined for the dustbin.
After a rather different amount of bread was cast towards the stale pile, I decided that enough was enough and was inspired bu a post written by a great foodie, http://www.allyskitchen.com/ wanted to save these lovely loaves & make some breadcrumbs that I could leave in the freezer and when making anything with a breadcrumb requirement will have it ready, bagged up and delicious herby breadcrumbs for everyone to enjoy (excellent for chicken tenders & home made fish fingers)
Ingredients
Any type of bread that you have left over, I used a cheese & onion loaf, about 3/4 of it was left and when pulsed in the food processor almost filled it)
Herbs
I added a tablespoon of each of the following herbs into my breadcrumb mixture and gave a good mix
Dried Thyme
Dried Parsley
Dried Oregano
Dried Majoram
Dried Chilli
Dried BasilI then spread the combined ingredients onto a baking tray and for 10 minutes (shaking twice) dried these out in the oven.
Once cooled I put into freezer bags (made about a half a pint of breadcrumbs per bag) and these will last for a good few months.
Could not wait to use them and so breaded some chicken & it had the distinct hint of chicken parm whilst cooking. I would like to try this again with fresh herbs and so shall be claiming on the stale bread from now on for the freezer!
