Palapa Recipe: Complete your Meal with a Spicy Side Dish

When we say palapa, most of us think about that thatched-roof with an open-sided structure that can be commonly found in beaches. However, in Southern Philippines, it is the term for a spicy side dish. For me, I love eating this side dish with a fried fish.

Palapa can also be used as an ingrediet for other main dishes in Southern Philippines just like chicken papar. Yet, whether you use palapa as a side dish or an ingredient for a main dish, it’s still one of the bests Filipino recipes.

Gather these ingredients that are needed to prepare palapa:

  • 1 bundle of spring onion (approximately 20 grams)
  • 1 red onion
  • 1 thumb-sized ginger
  • 10 pieces of bird’s eye chili (you may add more if you want a spicier palapa)
  • 1 tbsp salt
Follow the following steps for preparing palapa recipe:

1) Wash the spring onions in running water and remove the roots. Then, cut them into small pieces.
2) Chop the onion and ginger in small pieces.
3) Grind the ingredients using pestle and mortar.
4) Add the salt and chilis then grind again.

You may then transfer the palapa to a side dish container. Palapa leftover may also be refrigerated.
