Chicken Papar Recipe

You’ve already heard about famous Filipino recipes like the Bicol expres of the Bicolaños, kare-kare of Pampangueños, and kalderata that is popular in Luzon. But, have you ever heard any popular recipe from the Southern Philippines?



Recipes from Mindanao might not be that popular but their dishes tastes great and can also be considered among the best recipes in the country. Dishes from Mindanao are usually spicy and among their most delicious recipes is called chicken papar.

If you want to try a recipe from Mindanao for the first time, then gather the following ingredients:
  • 1 kilo chicken (chopped in adobo cut)
  • 2 coconuts (grated)
  • 15 tbsp palapa
  • 1 bundle spring onion (sliced)
  • 5 pieces red bell pepper (sliced and seeds removed)
  • 3 tbsp turmeric powder
  • 1L water
  • Salt
  • Vetsin

The chicken is actually cooked separately from what we call “papar”. The chicken will actually be cooked in fresh coconut milk. Yes, just like in my previous posts, only fresh coconut milk must only be used in this recipe.

So, here’s how you can make your own coconut milk.

1) Put the one grated coconut in a large container.
2) Pour 1L of lukewarm water.
3) Squeeze until the milk is thick and creamy.
4) Separate the milk from the grated coconut through a strainer.

Now that you have prepared your coconut milk, the chicken can already be cooked by following the given steps:

1) Let the coconut milk boil.
2) Once it boils, add the chicken, 2 tbsp turmeric powder, 5 tbsp palapa, salt, and vetsin. Let it simmer for 20 minutes.

3) Add the spring onions and the red bell peppers. Let it simmer again for another five minutes.

4) Remove from heat.

Now, your chicken is already prepared so you need to also prepare the papar in order to complete the chicken papar recipe. The main ingredient for papar is actually grated coconut. Prepare papar by following these two steps:

1) Mix one grated coconut with 10 tbsp of palapa, 1 tbsp turmeric powder, salt, and vetsin.
2) Cook the papar in medium heat for 30 minutes.  Cook until the coconut grate is dry.



Once your papar is prepared, the next thing that you should do is to remove the chicken from the coconut milk and mix it with the papar.

The coconut milk serves as the soup and is usually served in a separate bowl while the chicken and the papar is placed on top of steamed rice. Enjoy your chicken papar meal!
