The sweet sour red cabbage recipe prep time: 15 minutes start to finish: 6 hours 15 minutes 8 servings
Ingredients:
4 slices bacon, diced
1⁄4 cup packed brown sugar
2 tablespoons all-purpose flour
1⁄4 cup water 3 tablespoons white vinegar
1⁄4 teaspoon salt
1⁄8 teaspoon pepper
1 medium head red cabbage (1 1⁄2 lb),shredded
1 small onion, sliced
Method:
1 In 10-inch skillet, cook bacon over medium heat about 5 minutes, stirring occasionally, or until bacon is crisp. Using slotted spoon, remove bacon from skillet; drain on paper towels. Reserve 1 tablespoon bacon drippings. Refrigerate bacon.
2 Spray 3- to 4-quart slow cooker with cooking spray. In cooker, stir brown sugar, fl our, water, vinegar, salt, pepper and reserved bacon drippings until well mixed. Stir in cabbage and onion.
3 Cover; cook on Low heat setting 6 to 7 hours. Stir in bacon before serving.
Notes and Tips:
Any color of cabbage is tasty eaten raw or cooked. This cruciferous vegetable contains a good amount of vitamin A and C. For a sweeter touch to this recipe, add another tablespoon of brown sugar; for a more sour taste, add an extra tablespoon of vinegar.
