This flavour-filled rub is great for marinating beef steaks, pork chops and lamb cutlets.

Cooking Time 5 minutes
Makes about 1/3 cup

Ingredients

1 tbs coriander seeds
2 tsp cumin seeds
1 tbs dried oregano
1 tsp smoked paprika
1 tsp sea salt flakes
1/2 tsp garlic powder
1/4 tsp cayenne pepper
1 tbs brown sugar
Pinch black pepper

Method

1. Place the coriander and cumin seeds in a frying pan over medium heat. Cook, stirring, for 1-2 minutes or until toasted. Set aside for 10 minutes to cool.

2. Transfer to a mortar and pound with a pestle until coarsely crushed.

3. Combine the coriander mixture, oregano, paprika, salt, garlic powder, cayenne pepper, brown sugar and pepper in an airtight container.

Notes
Store in an airtight container in a cool, dark place for up to 1 month.
